
Cava due its singularity is a Spanish cultural, business, wine heritage.
The origin of Cava is associated from the Spanish wine producing boom in the 19th century. The first bottle of Cava dates from 1872, more than a century in Spain. The ideal varieties of grapes for the production of Cavas were chosen, which are Macabeo, Parellada, Charelo, and the plantation started. In 1887 the Phylloxera (a pest of commercial grapevines worldwide) destroyed all the grape plantations. The recuperation of the vines started as soon as the phylloxera was exterminated, adapting the production to the Champanoise method.
In the early 20’s, Cava finally was made, growing into a very important industry in the 60’s
In the 80’s Spanish Cava reached its commercialization worldwide.
Today, Cava is one of the most dynamic and prosperous industries in Spain. The production of Cava reaches a sum of 200 million bottles a year which is distributed worldwide.
To produce Cava, the producer needs to comply a series of requirements, due these requirements in 1972 a regulatory board was set up. The Cava board meant along with the adhesion of Spain to the CEE, recognition of Cava as a quality Sparkling wine. The board regulates all the producers of Spain, which consists of 163 regions.
In the year 2004 a total of 221 million bottles were produced in Spain.
Requena is located in the province of Valencia; and is recognised as one of the most important wine areas in Spain. Under the Requena-Utiel Wine appellation and the Cava appellation, the Wines and Cavas are always undergoing efforts to improve the final product, due to this constant improvement Torre Oria is a wine cellar which is recognised worldwide.
Torre Oria started of as a small family winery, and as the years have gone by has grown to be one of the largest producers of Wine and Cava in the area.
In the year 2005, Torre Oria produced and sold more than 1 million Bottles of Cava.
